A little off the beaten path will make it less likely for you to be understood unless you speak Italian. Nevertheless, here are some places you should consider:
Cinqueterre
Tivoli
Civita di Bagnoregio
You should still consider a few of the staples, including Venice and Florence. They are worth it. Rome is amazing, but it is a tourist trap and thieve's den in the extreme.

Italia!
I lived in northern Italy in Sacile while working on Aviano Air Base and traveled to the following places:
Sacile (The little Venice)
Trieste (Close to Slovenia)
Lago di Barcis (Lake near Maniago)
Lago di Croce (Another Lake)
Lido di Jesolo (The Beach!)
Lignano (Another Beach)
Verona (Romeo & Juliet)
Venice (Lots of places to eat...St. Marcus Square)
Rome (Colosseum)
Pisa (Very small town..you'll be done rather quickly)
Cinque Terre (5 Towns - ready for hiking...or take a train)
Florence (very quaint)
You're gonna have to learn some Italian...you're an Ambassador so represent your country well!
