    Winter motor project..ideas?

So after a year long complete café rebuild I was able to ride all summer long with a few issues. So winter is creeping and the plan was to tear into the motor to fix the issues I have and perform some upgrades. I'm completely new to engine work, but I figured I would take my time. Are there any upgrades or particular common items that eventually fail that would be worth looking into while the engine is opened up.?

So some of the problems I’ve noticed the last month that I plan on looking into are the following:

--Random oil leaks that I’ve not pin pointed the location yet.
--New petcock still leaks gas on kickstand
--Top vent tubing smokes more than I would like when hot outside.
--Toe shifter hard to shift only the first 10-20 mins of riding.
--Slight knocking and hissing sound coming from the engine.

I have other threads started for these issues, but I put them on hold since it was drivable at this point.

Thanks for any ideas you guys have.

If you're going to have the engine out, I've heard a rumor that you can flip it over, remove the oil pan, and shim some kind of pressure relief spring. This is supposed to increase oil pressure or volume which is slightly deficient in second-gen 750s. I don't know the details, maybe someone with more experience can chime in with a better explanation.
