Hey all, does anyone know if you can swap this seat for a EZ ,E, G, or T seat? I want to cafe this bike but not sure on what seat to start with

Take that seat and re-contour the foam. Then re-cover it. Like this:

What did you use to shave it? just a long razor?

Go at it with a serrated bread knife to get rid of the big chunks and get it to the basic shape you want, then staple some coarse sandpaper to a block of wood to use for final shaping and smoothing. That is what I did and it seemed to work well, although a bit messy, so do the sanding/shaping outside if you can.
