I'm super inexperienced with bikes this old so any good tips would be great. When it does get warm (and I take the socket holding it choked out), it rides great.

79 850G Choke Cable Replacement?
Just recently bought a 79 850G that has been modified to hell. It came without a choke cable and Ive been trying to get this one on. Anyone have some tips for putting it on? Im not sure how to get it onto the mount so it has the proper tension? It also seems to have trouble getting into the steering stem.

That's the wrong cable. It should have a ball nipple not a barrel shaped one. That cable is for CV type carbs. The "correct" starter (choke) cable is part # 11 on the link below. Not available but can search the Suzuki part number to find them on eBay usually -
Original 1979 Suzuki GS850G Parts. Search Handlebar - Front Fender parts using manufacturer microfiche assembly diagrams.
Part # 64 and 65 on the one below for the missing cable adjustment parts. These are available -
