    Where should I start?

Suzuki gs1100 (8v) with mikuni 34mm CV carbs which have individual air pods, coupled to a Vance & Hines 4-1. Main jets were 132.5 bike running rich, changed these to 120 mains needles set (lowest, richest) bike running to lean. Should I go for 125 mains or 127.5? What would you choose?

Personally, I would choose to do a little more systematic approach.

Change just one thing at a time, or you won't know if your change worked or not.
And, ... changing 5 jet sizes in one jump doesn't help a whole lot, either.

Stock main jetting was 115. With a pipe, you might need 120-125, depending on the baffle. Add pods, you might need 130-140.

Test one system at a time. Get the mains right, then move to the needles, then move to the pilot, but you shouldn't have to change anything there, as airflow at idle doesn't change when you add pods and a pipe.

Get a dynojet kit. The needles are thinner than the stock needles so the midrange mixture will be more appropriately tuned for pods and a header. The main jet only comes in at high rpm and throttle positions.

125's if you ride above 4,500' predominantly and 127.5's if you ride closer to Sea level.
