I have RS 36 carbs and use a stock single petcock with no issues. . I have never seen anyone with dual petcocks.

Single is fine for road use. Twin are sometimes needed for roadracing. At Philip Island, a lot of single petcock bikes suffer fuel starvation around the long left onto the front straight. Holed piston time...

          use what you have...
you can also install a vacuum cap over the right side fuel inlet and only use the left side and run to your single petcock.
i have done this on street and drag raced bikes with no bad results or problems.
