Can someone help me in confirming that the carbs for my 1981 GS 850 G (Mikukni CS32SS) are compatible/interchangeable with the carbs off a 1982 GS 750 E?

YES and NO!
GS(X)750E carb id no 45410 BS32SS (850 45120) BS32SS
All the internal jets, needles and screw setting are different.
They should fit the air box and head, just depends on the size of the rack that they are on.
