In the quest to get our wonderful old 1980 1000G back to her former glory, we have found some off year sider covers. Will they fit? We can paint them no problem.

You sure you got your covers identified correctly? There was no GS1000 is '76. And in '78 there was no G model. The GS1000G entry came in '80.
To answer your question more specifically, no the '78 GS1000 frame covers are not the same as yours.

Like he said, no 1000G, pre 1980. I'm thinking the 850G & the 1000G shared the same body parts for a few years. Maybe "79" thru "81".
