i have a 81 gs1100e with the stock non functional self canceling turn signal switch that i would like to change to a manual cancel turn signal switch assembly. does anyone know what would be something that works?

The easiest I can suggest is something from an early 750 or 550 (or from a GT). I'm pretty sure they're not 'plug & play' but they have all the same functions - just be a case of re-working the electrics.

The self canceling turn signal system uses a control box. Not sure but you may have to rewire the system to bypass this box in order to make the system full manual.
