is it possible to run Velocity Stacks on my 83 gs750es if i change the jetting?i still have the stock carbs.

I would think it's possible, but you'll shorten your engine life without an air filter. -

I did years ago on some Triumphs that I raced and also on an AJS that I ran Hare and Hounds and Prairie Dog Scrambles on.
I learned my lesson. Sucking in sand through a velocity stack does bad things to the carb, valves, rings, and cylinder walls.
