              What are the springs for on that exhaust system?

                The flanges on the header are a separate piece and detach from it. The springs hold them in position.

                  As mentioned, there are flanges bolted to the head which are essentaily 2 or 3 inch head pipes. The real head pipes fit over the flanges and the springs hold them in place. The mid pipe and exhaust can also connect in the same way with a slip-fit and springs.

                  The idea comes from racing where they may have a need to pull the exhaust several times per weekend, and the springs are way faster and don't risk damage to the head bolting and unbolting a header pipe over and over.

                    In modern racing (motogp as the OP suggests), they do it because it's impossible to snake the exhaust around the frame, sub-frame, swingarm, and other tight components without installing it in separate sections, as well as for the ease of removal.
