'78 GS 750 Rebuild_SBK

Hey guys,
I am doing a rebuild of my 1978 GS 750. Just had whole top end rebuilt with big bore. I essentially have the whole bike in a box, and down to the frame. I am looking for the best resources for compatible, high quality components for my rebuild. ie. foot controls, indicators, speedo and tac, intake filters, drag bars or clip ons, etc. Just want to make sure I am getting high quality stuff that will work. and really just looking for advise on all aesthetic components. I have no idea where to look.
I also want to upgrade at least the front rotors and calipers.
Any other things I may have not considered or suggestions?

Here is what I have done:

carb clean and sync
new ignition
new intake boots
new battery
new grips
plugs and cables
coils
total top end rebuild with 850cc big bore
New custom seat
