This will probably work for other seals and other bikes as well. The location of the GS1100 shifter oil seal (down in a hole and behind the frame) makes getting it out kind of a pain. Here's what worked for me.
Lisle makes a tool called the "Shaft Type Seal Puller," product number 58430. The entire tool won't fit into the shifter seal's home, but the tip that hooks into the seal is removable and small enough to get in there. Hook the tip into the center of the seal, then push the base of the tip up and pull. there's a hole in the base of the tip, and for extra pulling power I stuck a small pair of right-angle pliers through the hole and used the frame as leverage to pry. The seal came out quite easily.
The tool is overall pretty handy, so when you're done you'll have a nice addition to your toolbox.
